Healthy Muffins with Fruit | Baking #1

I love baking. I really do. I don’t think I am some excellent cook but I do believe that I am quite a good baker. Today my grandparents are coming for a visit and I decided to bake them something delicious. However, I didn’t have much time because my mom needed to use our kitchen too; therefore I chose to bake something quick, easy but amazing: the best muffins ever. My family is obsessed with healthy lifestyle and healthy food. For example, my dad wouldn’t probably eat your typical muffins with chocolate chips etc. This recipe is more of a healthy version of this sweet sensation.


You will need:

125 g all-purpose flour

125 g spelt flour or whole wheat flour (I used spelt flour)

85 g cane sugar

230 ml white yogurt

1 baking powder

1 egg

3 tbsp rapeseed oil

fruit (you can use anything you like)

What you need to do:

Put the egg, yogurt and oil in one bowl. Put flour, sugar and baking powder into another bowl and mix it well. Then start mixing the first bowl and slowly add the powder mixture. Mix until you get the desired dough. Mine look like this:


Prepare your fruit. I decided to use mixture of blueberries, black currant and raspberries.


Put one table spoon of dough into each muffin, add some fruit and add half a spoon on that. You can also add some fruit on top, just a little bit. In the end, your muffins should look like this:

Preheat your oven to 160 degrees. Bake for circa 25 minutes.

And there you have it. Delicious and healthy muffins. Following this recipe I got 12 amazing muffins (medium sized). I hope you enjoyed this recipe and if you try it out, let me know how you liked it. 🙂
