Cream Avocado Gnocchi | Cooking #3

NOTE: This recipe is suitable for vegetarians and can be adopted for vegans as well.

My roommate and I have sort of a cooking deal – she cooks when I can’t and I cook when she can’t (tbh, I cook most of the time, haha). She is a big foodie and very obsessed with meat, which cannot be said about me. I love food but I am not a huge fan of big beef steaks. I do enjoy eating chicken or fish, however I don’t it that often. So when my roommate cooks, she likes to cook something she would call “proper meal” – that usually consist of potatoes and some sort of meat. This has resulted in me trying to cook more healthy and veggie based meals. And today I decided to share with you one of my favourite things to cook. It is very quick and easy, so don’t worry if you’re not exactly confident in the kitchen!

CREAM AVOCADO GNOCCHI

You will need:

gnocchi

white yoghurt (you can get a soya based one as well)

avocado

zucchini

garlic

onion

olive oil

salt, pepper

some spices and other things to add flavour (I used barbecue sauce, ketchup, garlic mayo, chicken mix spice, oregano and herbs de Provence)

optional: cheese

What you need to do:

Cook the gnocchi (there should be instructions). Once they are done, put them in your bowl or plate and pour a little of olive oil on them.

Put white yoghurt in an empty bowl. Add some grated garlic or garlic granules, salt and oregano until you are happy with the flavour. Then use anything you want to add more interesting flavour. I added a bit of barbecue sauce and garlic mayo and a teeny tine bit of ketchup + chicken mix spice and pepper.

Slice zucchini, avocado and a small amount of onion. Cook the zucchini (you can do it in a microwave if you are in a hurry, just pour some hot water from a kettle to a bowl, put the sliced zucchini in and let it microwave for circa 5 minutes). Add all the vegetables in the cream sauce (the one with yoghurt) and mix it properly.

Put the sauce with vegetables on your gnocchi. Add some herbs de Provence and grated cheese if you feel like being a bit fancier.

And… you’re done! It’s really, really easy a absolutely delicious, even if it sounds a bit weird. Honestly, it was an experiment of mine but I’ve never had anything as delicious as this. And I’m not just saying that, I also received some really positive feedback on this. So try it at home and let me know how it turned out! 🙂
